Welcome Back, Egg!

We saw Lydia's allergist this week. Her allergies remain the same, but he did tell me I could give her a few bites of something that contained baked egg. Oh, how I have missed baking with egg! It makes all the difference.

I was a bit apprehensive, but I thought cornbread would be the perfect place to start. I still need to keep everything casein-free since she is allergic to milk protein as well. I used coconut oil and hemp milk as replacements to butter and milk, respectively.

It tasted like the cornbread I remember from 2 years ago. She loved it and no hives! I am super excited!!!!

Here is the recipe I adapted from my Betty Crocker cookbook:

Casein Free Corn Bread

1 cup hemp milk
1/4 cup coconut oil, melted
1 lg egg
1 1/4 cups yellow cornmeal
1 cup all-purpose flour
1/2 cup sugar
1 tablespoon baking powder
1/2 tsp salt

1. Heat oven to 350. (original recipe calls for 400.) Grease bottom and sides of round pan, 9 x 1 1/2 inches, or square pan, 8 x 8 x 2 inches, with shortening.

2. Beat hemp milk, coconut oil, and egg in large bowl. Stir in remaining ingredients all at once just until the flour is moistened (butter will be lumpy). Pour batter into pan.

3. Bake at 20-25 minutes or until golden brown and toothpick inserted in center comes out clean.

A Work in Progress

This is what I woke up to this morning. Well, that and beautiful sunshine peeking over the treeline and streaming through my kitchen windows! The kids didn't get to bed last night until 11 pm. I was hoping they would sleep in. I should know better! This is too exciting! An early morning start means I will get a lot done today. Lots of organizing to do yet, but I am so thankful to be in our house! Thanks to everyone who put in a lot of hard work yesterday to get us settled in! It's slowly coming together. Once we're settled in I will post pictures!

Seven and a Half Months Later...

The big day has arrived! We are moving in today! It seems surreal. We have been so blessed being able to purchase this home and remodel it to fit our personal needs and style! Thank you to all (who will probably never read this) for all the GREAT discounts and free labor! We are blessed beyond measure. I can't wait to get settled in and get back into a daily routine! Menu planning, cleaning schedule, laundry schedule... here I come!

Big, Sexy Hair- The Continuation

Ok, I know I have to draw the line somewhere and stop posting these pictures. But I HAD to post this pic I took over the weekend. I thought it was hysterical... probably because it was 7 am and I hadn't had my coffee yet. No... it still makes me laugh. This girl's hair has brought so much joy to my life. Who knew bed head could be such good medicine?

Crocuses... Or Is It Croci?


It's so refreshing to see beautiful color dotting our landscape. I think I've counted 5 different types of Crocuses. Today I even saw a fuzzy, golden bumblebee floating along among the flowers. A few daffodils are set to bloom tomorrow. Ahh, I can't say enough about Spring!

Almost There!

Yes!!!!! It's finally happening! We are moving into our home on Saturday! I can hardly believe it is finally happening! Brian has been working CRAZY hours to get everything done. The whole house has come together beautifully! It will be so nice to have our own space again and be a little family unit on our own. It is going to be a great week! Lots of work yet to do, but the anticipation is like Christmas x 10.

Grandma M. bought Lydia these cute sandals recently and this is what happens when spring does not come fast enough. We throw all fashion sense in the face of the public and wear our sandals anyway. It made one little girl very happy!

The Jury Is Still Out....

A few weeks ago when the weather was crummy I took the kids to the mall to get rid of some pent-up energy. There happened to be a Mom's event with several air filled jumping "houses" (what ARE those things called?) for the kids- which, unfortunately, proved to be absolutely terrifying for my kids. While there I happened to put my name into a drawing for a $50 gift basket from J.C. Penney salon. And guess who won? I could barely believe it! The basket had several Big, Sexy Hair care products and a bright red nail polish from O.P.I. Lots of fun!!!

Recently I've been wondering if Lydia has been secretly helping herself to my Big, Sexy Hair products. I've been collecting evidence to support my theory. What do you think?

Hello Spring!


Yes, Spring has poked her green goodness up through the earth! Thank you, Lord, for the change in seasons! It's brings me such joy to see bright, green growth in my new garden! I'm not even sure what has been planted in these gardens, so for me our flower beds are a treasure chest. So many exciting things to come!

I know we are in for some chilly days ahead still, but the kids and I are loving the 74 degree weather today. We even gave up our naps for the day! Play, play, play!!!! Tomorrow there are thunderstorms headed our way, so we can catch up on sleep then.
